yummy tuesday dinner

I found this awesome pasta recipe in Southern Living.....I though WTHeck, i love veggies and pasta so Ill give it a whirl...it was awesome!! I also made garlic toast and a salad....for dessert we had homemade banana's foster yummola!! Recipes for pasta and salad as follows:



Pasta Provencale:
2 Med. zucchini
1 (8 oz) pack of fresh mushrooms
3 cloves of garlic
1 green pepper
1 (14 oz can of tomatoes)
1/4 chopped onion
2 tbsp basil
1 tbsp oregano
1/4 salt&pepper
5 oz dried penne pasta
1/4 cup Parmesan cheese


Cook pasta as says on package.

Saute the first 5 ingredients in olive oil for 3 minutes..Add tomatoes, basil, oregeno, salt, and pepper, stir well. bring to a boil. reduce heat simmer for a minute.

Transfer to a large bowl, add cooked pasta, parmesan cheese, toss gently.

Easy Chef Salad;
8 cups of salad greens
2 cups chopped mixed vegs.
1 purple onion
1 lg avocado
6 slices of bacon

Toss together

Homemade Ranch from ranch package...


I hope everyone has a great Tuesday dinner with their families, I sure did now off to the park with my boys!!!
